Mochi

Making mochi is one of those experiences that brings you straight back to your childhood of playing with play dough. Not only does mochi taste like a chewy ball of comfort that gives a satisfying mouth feel every time you sink your gum into it, it's also super easy and fun to make.

Ingredients:
1 cup of mochi flour
1/4 cup of white sugar (some other recipes call for more sugar, I prefer subtle sweetness)
1 cup of water
Optional flavoring: here I used matcha powder (1/2 cup because I'm a matcha fanatic)

Instruction:

1. Mix all the dry ingredients together




2. Add water. When you first add water it might look clumpy, keep mixing until you incorporate all the ingredients


3. Microwave for 60 seconds. And the mix again. And microwave the 2nd time for 40 seconds.

4. By the time you're done cooking it should look like this



5. Fill your baking pan with mochi flour and start kneading. Because you need to. (Ba-dum tss. Sorry for the bad pun)


6. Form into balls. You can wrap it around ice-cream, or I like I wrap it around a fruit and freeze it. It'll be soft/chewy on the outside and sorbet-like on the inside.
